The Ultimate Cookie Cake Recipe!

I tried and experimented with a ton of various ingredients before I finally decided on this wonderful Cookie Cake recipe that is original but is inspires by various recipes from baking youtubers and bloggers.

Ingredients-
1/2 cup of softened butter

3/4 cup of sugar (fine sugar- either brown, white, castor or icing sugar) DO NOT USE GRANULATED.

1 teaspoon vanilla extract

1 egg or 1 flax egg (a flax egg is made up of 1 tablespoon flax seed grinded and 3 tablespoons water mixed into it, and kept aside for 10 minutes to get eggy consistency)

1 cup flour (you can use either atta or maida but I used half and half of both)

1 teaspoon baking powder

1/2 teaspoon corn flour

4 tablespoons cocoa powder (that's 1/4 cup)

2 tablespoons chocolate chips

Method-
First cream together the butter (softened at room temperature) and the sugar. Then add in the egg. I used a flax egg for my cookies but if you have a regular egg you can use that too.

After that, add in the vanilla extract and mix it in well. make sure you are mixing fast but not for a long time. I used a spatula instead of a whisk here.

Then, dump in all of the dry ingredients into the bowl. Only after they're all in, stir with a spatula and use the cut and fold method until it forms a nice, soft dough. If the dough is too dry, add in a little bit of melted butter or if it's too wet, add in some flour and sugar.

NOW comes the most important part, Refrigerate for 35 minutes. DO NOT SKIP THIS STEP.

preheat the oven at 180 degree Celsius.

After refrigeration, take out the dough and mould it into six to seven small lumps and place them on a parchment lined baking sheet. add in more chocolate chips on top and bake at 180 degree Celsius for 15 to 30 minutes in 10 minute intervals.
